Dip's Diner
This is a very quick and simple preparation. It’s very tasty and can be prepared as an alternative to Mawa Cake. It is vanilla flavored and has a soft texture that is moist and literally melts in your mouth. Frost it with chocolate butter-cream icing and use it as a birthday cake.
Equipment and Utensils
Hand held electric cake mixer
Rubber scraper spatula
Big mixing bowl
Small bowl
Stainless-steel or plastic sieve
Cake tin (5¼ x 5½ x 1½ inches)
Digital kitchen scale
Ingredients
125 grams Maida (All Purpose Flour)
1 teaspoon Baking Powder
Pinch of Salt
55 ml Whole Milk at room temperature
1 teaspoon Vanilla Essence
110 grams Pure Ghee or Unsalted Butter at room temperature
150 grams Powdered Sugar
2 Eggs at room temperature
Directions
Preheat the oven at 180oC for 10 minutes.
Grease the baking tin.
Sift the flour, salt and baking powder and set aside.
In a small bowl, combine the milk and vanilla; set aside.
Take butter in a large bowl.
Start beating the butter using an electric mixer set at medium speed.
Beat the butter until creamy.
Add sugar and beat until the mixture is pale and fluffy.
Drizzle in the eggs, beating each addition until incorporated fully.
Reduce the speed to low, and add dry ingredients.
Add milk and beat until mixture just starts to combines.
Pour the batter into the prepared pan and spread it evenly.
Bake for 25 minutes at 180oc.
Take it out of oven when it puffs and a skewer inserted in its center comes out clean.
Let it cool completely on a wire rack.
Run a table knife around the edge of the pan and invert the cake onto plate.
Cut it and then it’s ready to serve.

Am sooooooooooooo glad that you posted the same. You know what for Xmas since i didnt have sponge cake recipe from you i baked the choco chips pound cake and the mawa cake…..n it was such a super hit among kids….
