Dip's Diner
This is a healthy and nutritious dish made from boiled potatoes. It is especially liked by those who avoid green leafy vegetables in their meals. This dish is perfect to be made during the busy morning hours. Eaten with roti, it’s a great option as a Tiffin box item.

Ingredients
50 grams (1 small bunch) Fresh Fenugreek Leaves picked, washed
150 grams (3 medium) Potatoes boiled and cut into 1 cm cubes
100 grams (1 big) Onion finely chopped
1 Green Chilly chopped
1 tablespoon Garlic finely chopped
1 teaspoon Cumin Seeds
1 teaspoon Salt
1 tablespoon Vegetable Oil
Directions
Roughly chopped fenugreek leaves.
Put oil in a wok and keep it on medium flame.
When oil is hot, add cumin seeds, turmeric powder, chopped chilies and garlic.
Sauté till garlic turns light brown.
Now add onions, stir well till onions are translucent.
Add boiled potato cubes and fry with onions for 1-2 minutes.
Now add chopped fenugreek leaves, salt and sugar.
Make the flame high and stir fry for 2 minutes.
The dish is now ready; serve hot with roti or paratha.
