Okra Stir Fry
Here’s a simple and tasty stir fried dish made with Okra and Onions. My regular readers already know my love for Okra. Popular names for it are ‘Bhendi’, and Lady’s Finger. An Okra preparation appears on my family’s plates atleast once a week and sometimes more than once too. J But I ensure that I prepare it differently every time.
Okra is very healthy. It gets slimy when cooked and many people dislike this trait of okra. Due to this somewhat slimy nature, my sister and brother-in-law too never have it in their diet. However my husband and I find it tasty and I know that it is healthy as well. I am sure you will try to include it in your diet.
It contains potassium, vitamin B, vitamin C, folic acid, and calcium. It’s low in calories and has high dietary fiber content. This is very good in controlling blood glucose levels. So do try to include this super veggie in your diet.
I got super tender and small okras this time. I cut them into juliennes just like we do with onions. This stir fried recipe takes some preparation time but it gets cooked within 10 minutes.
Equipment and Utensils
Flat wooden spoon
250 grams (2 cups) Okra trimmed and cut into juliennes
100 grams (2 medium) Onions cut into juliennes
1 tablespoon Vegetable Oil
7-8 Curry Leaves
1 teaspoon Cumin Seeds
¼ teaspoon Turmeric Powder
¼ teaspoon Asafetida Powder
¾ teaspoon Kashmiri Red Chilly Powder
¼ teaspoon Garam Masala Powder
½ teaspoon Dry Mango Powder
1 teaspoon Salt
Keep the frying pan on medium high flame with 1 tablespoon oil to heat.
When oil gets hot, add all ingredients mentioned under the tag ‘For Tempering’.
Fry for 10-12 seconds and add onions.
Fry onions till they turn translucent, it will take 2-3 minutes.
Now add all okra juliennes and sauté well for 3-4 minutes.
When Okras are almost cooked, add all ‘Dry Spices’ along with salt.
Fry for 1-2 minutes, till everything is well combined and cooked.
Serve hot with Roti.
