This is a basic gravy mix which will come in handy for many recipes during busy weekday meal preparations. Make this paste on weekends and enjoy restaurant-like food during the week. It is not a very hard preparation but it does require some patience.
Equipment and Utensils
Mixer or Blender
600 grams (6-7 medium) Red Onions
1 tablespoon Vegetable Oil
Peel the onions by cutting them into halves.
Now cut them very thin.
Keep the kadhai on medium high flame.
Add vegetable oil and let it heat.
Now add all thinly sliced onions into it, stir well and lower the flame.
Now let the onions cook in their own moisture.
Keep the flame low and stir every 1-2 minutes.
Don’t increase the flame as this will burn the onions.
After 12-13 minutes, the onions will brown.
Stir well so that the browning happens evenly.
Switch off the flame when all onions are properly browned.
Now let the mixture cool.
After it is cooled down, blend it in a mixer to get brown onion paste.
