Lauki Ka Soup
I know that by reading the name of this recipe you must be wondering who makes such a weird soup! I too had a similar opinion until one day my Nutritionist at the gym told me this recipe and asked me to have it every day for a week. I too made (various) faces and told my mother to cook it for me but believe me, it tasted superb and was very filling. You too should prepare this soup and have it with salad for lunch and you will not feel hungry till evening.
I just modified her recipe a little. Instead of milk, I am adding water. No cream or any other thickening agent is used in this recipe. It is a perfectly vegan and healthy soup recipe. This preparation is not at all spicy and it is very good for kids as well as any elders in the house.
If you are on a weight loss diet then this is a filling dish to have, since 100 gm of bottle gourd contains only 15 calories. Bottle Gourd is easy to digest and contains a lot of fiber. Thus this soup is very nutritious and even diabetic people can have it.
