This is the first time I am organizing an event on my blog. 🙂 For this cooking challenge I have chosen coriander as my main ingredient. So if you have a dish which is using coriander in any form as a main ingredient then do submit your recipe for this Challenge.
Fresh coriander leaves are an excellent source of minerals like potassium, calcium, manganese, iron, and magnesium. They are also rich in many vital vitamins including vitamin A, beta carotene, folic acid and vitamin C, that are essential for optimum health. As we know vitamin C is a powerful natural antioxidant. Coriander leaves provide 30% of the daily recommended levels of vitamin C. The health benefits of this herb are many.
Considering the health benefits of coriander I have planned to include it daily in my family’s diet. I am looking forward to recipes which are made using this herb as a main ingredient and not just as a garnish for the dish. Hope this challenge will help us all to know recipes that can be made using coriander.
You can use curled parsley, flat leaf parsley, coriander seeds, fresh cilantro leaves and stalks and off course fresh coriander leaves and stalks to make any dish. Both vegetarian and non-vegetarian recipes are welcome.
