Aren’t you bored of having your daily dose of roti, rice , dal and sabji! I am always in search of new recipes to try out in my kitchen even if they are not exotic ones. My husband and I enjoy many simple recipes too. Here’s one such simple recipe made of french beans; these are available all year around. Moreover, I always make an effort to cook french beans in many different ways. Here I am presenting the South Indian way of making this veggie with coconut. Try it out and know the difference.
Equipment and Utensils
Nonstick frying pan
Flat wooden spoon
Ingredients
250 grams (2 cups) French Beans stringed and cut into 1 inch pieces
¼ cup Freshly Grated Coconut
2 tablespoons Coconut Oil
½ teaspoon Salt
For Tempering
1 teaspoon Mustard Seeds
¼ teaspoon Asafoetida (Hing)
½ teaspoon Turmeric Powder
1 inch Ginger Shredded
1 tablespoon Urad Dal
2 Green Chillies Chopped
8-9 Curry Leaves
Directions
Keep the frying pan on medium high flame with 1 tablespoon oil to heat.
When oil gets hot add all the ingredients mentioned under the tag ‘For Tempering’.
Fry for 1-2 minutes till ginger gets golden brown color.
Now add french beans.
Sprinkle some salt and mix well.
Keep stirring after every 1 to 2 minutes until french beans are cooked.
It will take 7 to 8 minutes to get cooked.
Now add freshly grated coconut, mix well.
Let it cook for another 2 minutes.
Check for seasoning, add salt if needed.
Serve hot with rasam rice or phulka.
