Equipment and Utensils
Wok (Kadhai)
Flat metal spoon
Ingredients
150 grams (4 cups) Fresh Green Chawli Leaves washed, dried and roughly chopped
70 grams (1 medium) Onion finely chopped
1 Green Chilly chopped
1 tablespoon Garlic finely chopped
1 teaspoon Cumin Seeds
½ teaspoon Salt
Juice of 1 Lime
1 tablespoon Vegetable Oil
Directions
Keep the wok on medium high flame with 1 tablespoon oil to heat.
Crackle cumin seeds; add chilies and onions.
Fry onions till they turn translucent. It will take 2-3 minutes.
Now add garlic.
Fry for 1 minute till garlic’s raw flavor is gone.
Add chopped chawli leaves.
Now add salt.
Fry for 2-3 minutes, till vegetable is fried nicely.
Take it off the heat and add lime juice.
Serve with hot phulka or any mild rice dish.
