While Tortillas are not a part of Indian cuisine, they are an important part of Mexican cuisine. They could be compared to Phulkas in Indian cuisine. Tortillas are made from either Maize Flour or All Purpose Flour(Maida). Nachos, Tachos are dishes that are made based on Tortillas. This recipe describes the way to make basic Tortilla chips. Inorder to prepare Nachos or Tachos in India, we need to have the basic Tortilla ready. They don’t seem to easily available in shops. So this recipe shows you how to make your own Tortillas.
Equipment and Utensils
Deep Frying Pan (Kadhai)
2 Plastic sheets
1 cup Warm Water
1 teaspoon Vegetable Oil
200 grams (1½ cup) Maize Flour/Corn Meal (Makai Ka Atta)
60 grams (½ cup) Whole Wheat Flour
1 teaspoon Salt
2 teaspoon Dried Oregano
1 teaspoon Dry Chili Flakes
Take all ingredients mentioned under the tag ‘For Dough’ in a large mixing bowl.
Add warm water slowly, mix well; knead dough well.
When dough ball is formed, apply 1 teaspoon vegetable oil to make it smooth.
Now divide the dough into 10 equal parts.
Put oil for deep frying in a wok and keep it on medium flame.
Cover the rolling board with one plastic sheet.
Apply 2-3 drops of oil to the sheet.
Now take one dough ball and keep it in the middle of the sheet.
Cover the dough ball with another plastic sheet.
Roll it into 9 cm circle.
Remove the upper sheet.
With the help of knife cut the circle into 8 equal parts.
When oil is hot, add all 8 pieces into the oil.
Fry well for 2-3 minutes till they get crispy and golden brown colored on both sides.
Remove them with slotted spoon on absorbent papers.
Repeat the above procedure with all dough balls.
Your crispy and tasty chips are ready to serve.
Note: To make tortilla wraps bake the rolled ball on the hot griddle.
