Have you ever tried Indian style scrambled eggs? This is a recipe you will fall in love with. It can be made quickly and easily any time you feel hungry. It’s made of scrambled eggs cooked in the bhuna masala of onions and tomatoes. So here it is, a Mumbai style, tasty and spicy Egg Bhurji.
Equipment and Utensils
Nonstick frying pan with the lid
Flat wooden or metal spoon
4 Eggs cracked and whisked with pinch of salt and pepper
120 grams (2 medium) Onions finely chopped
125 grams (2 medium) Tomatoes finely chopped
2 Green Chilies chopped
1 teaspoon Mustard Seeds
½ teaspoon Turmeric Powder
1¾ teaspoon Kashmiri Red Chilly Powder
½ teaspoon Garam Masala Powder
1 teaspoon Salt
1 tablespoon Vegetable Oil
Put oil in a pan and keep it on medium flame.
When oil is hot, add mustard seeds, green chilies and turmeric powder.
After spluttering of mustard seeds, add onions.
Fry onions till they turn brown. It will take 6-7 minutes.
Now add tomatoes and fry for 3-4 minutes until a nice gravy is formed.
Fry for 1-2 minutes, till oil is released from the gravy.
Now add red chili powder, salt and eggs.
Eggs should be fried continually till they get scrambled and absorb the flavors of gravy.
This will take 2-3 minutes.
Now sprinkle some garam masala, check for seasoning.
Egg Bhurji is ready to serve.
