Potato and Capsicum is a popular combination. Adding potato to any preparation makes it quick and easy to prepare the recipe. This is a very simple but tasty side dish that goes well with simple rice dishes like Masoor Pulav or Peas Pulav. It can be had with hot phulka too.
Equipment and Utensils
Wok (Kadhai) with lid
Flat metal spoon
150 grams (3 medium) Potatoes washed and cut into 1 cm cubes
50 grams (1 medium) Capsicum cut into 1 inch square pieces
7-8 Curry Leaves
1 teaspoon Cumin Seeds
2 teaspoon Coriander Powder
1 teaspoon Roasted Cumin Powder
¾ teaspoon Kashmiri Red Chilly Powder
¾ teaspoon Salt
1 tablespoon Vegetable Oil
Keep the wok on medium high flame with 1 tablespoon oil to heat.
Crackle cumin seeds, add curry leaves and capsicum pieces.
Fry till they their skin turns brown. It will take 1-2 minutes.
Now add potato cubes.
Fry for 1-2 minutes, lower the flame and cover with the lid.
Let it cook for 3-4 minutes then open the lid.
Now add all dry spices and salt.
Fry for 1-2 minutes, till potato cubes are completely cooked.
