This is a simple pulao made with prawns. Light spices lend it a great flavor. It is a perfect Tiffin box recipe. This pulao is a very healthy and delicious combination of fresh prawns and aromatic basmati rice.
Equipment and Utensils
Frying pan (non-stick) with the lid
Flat wooden spoon
150 grams (½ cup) Basmati Rice washed
100 grams (½ cup) Fresh Prawns cleaned and deveined
75 grams (1 Big) Onion thinly sliced
4-5 Garlic Cloves thinly sliced
2 Green Chilies slit
1 teaspoon Cumin Seeds
½ teaspoon Turmeric Powder
¼ teaspoon Garam Masala Powder
¼ teaspoon Biryani-Pulao Masala Powder
¾ teaspoon Salt
½ tablespoon Lemon Juice
1½ tablespoon Pure Ghee
Wash the rice thoroughly.
Soak rice in 3 cups of water for 20 minutes.
Keep 1½ lit. of water in saucepan and bring it to boil.
Strain the rice.
When water is boiling, add the rice and let it cook on high flame.
After 6-7 minutes keep an eye on the rice.
Cook the rice till the grains are separated but not softened.
Then strain the rice and wash it under cold running water.
Keep the frying pan on medium high flame.
Add pure ghee and let it heat.
When ghee is hot, add cumin seeds, let them crackle.
Now add slit chilies, turmeric powder, thinly sliced onions and garlic.
Stir fry for 1 minute or till onions become translucent.
Add prawns, sprinkle some salt and sauté for 1 minute.
Now add precooked rice, salt and biryani-pulao masala.
Mix well gently to avoid breaking the rice grains.
Put on the lid for 2 minutes and lower the flame.
After 2 minutes, take it off the flame.
Let it sit for 10-15 minutes.
Then, sprinkle some garam masala and add lime juice.
Mix gently and the pulao is ready to serve.
Serve with cucumber-pudina raita.
Note: Add fried potato pieces for extra flavor.
