Sitaphal Basundi is one of the best dessert items from Maharashtra and Gujarat. It’s simple to make and is in high demand at the time of festivals and other such occasions.
Equipment and Utensils
Thick bottom pan
Flat metal spoon
3-4 Dessert serving bowls
200 ml (1 cup) Whole Milk
100 ml (2-3 medium) Custard Apple Pulp
1 tablespoon Granulated Sugar
10 grams Pistachio blanched and thinly sliced
10 grams Almond blanched and thinly sliced
¼ teaspoon Cardamom Powder
Pinch of Saffron Strands
Put milk in a pan and keep it on medium flame.
When milk is boiling add sugar and saffron strands.
Remove the milk from the flame and stir till it cools down a bit.
In this warm milk add sitaphal pulp, cardamom powder and sliced nuts.
Mix well and keep the mixture on very low flame for 1-2 minutes.
Make sure that the mixture does not boil.
Cool the preparation and then refrigerate it.
