One Pot Meal Recipe
Sometimes I miss my home and life in Mumbai city, where I had the luxury of access to stores and vendors close to my home. I didn’t have to wait for the weekly farmer’s market and I could get all vegetables from the vendor’s stall just around the corner. Nowadays, these vendors even stock exotic vegetables like colorful capsicums, mushrooms and baby corns.
Back to where I live now, in Vasai, on the outskirts of Mumbai, I went shopping for my weekly supplies at the local farmer’s market. I saw fresh kidney beans available with one lady. She said they were from her own field. I believed her since she was the only vendor in the entire market, who was selling kidney beans.
Now I envied myself because I knew I would never find such fresh garden bounty in the city. I really like it here, in Vasai, when I find such rare, seasonal, fresh, home gown vegetables and fruits.
I picked up 2 bunches of these fresh kidney (Rajma) beans. Oh yes, they were in pods. I cleaned them and got these pink and white beauties.
I separated the white and pink beans. White beans are used for curry and Pink beans are used to make this simple pulav rice.
It is a healthy and nutritious one-pot meal. If you follow my blog then you will know that I especially love one-pot meals. As a quick reference, here’s a list of some simple one pot meal recipes.
Kidney beans are a good source of several vitamins and minerals, such as Iron, Phosphorus, Copper, Vitamin B9 (Folate), Vitamin K1, Potassium and Manganese. They have a low glycemic index and so are best for people having diabetes.
Equipment and Utensils
Flat metal spoon
150 grams (¾ cups) Basmati Rice washed
100 grams (½ cup) Fresh Kidney (Rajma) Beans
125 grams (1 Big) Onion sliced
1 tablespoon Ginger Garlic finely chopped
1 tablespoon Vegetable Oil
1 teaspoon Salt
Dry Masala Powders
¾ teaspoon Kashmiri Red Chili Powder
¼ teaspoon Garam Masala Powder
Whole Garam Masala
1 teaspoon Cumin Seeds
1 inch Cinnamon Stick
2 Green Cardamoms
4 Black Pepper Corns
1 thin strip of Mace
Put oil in a pressure cooker and keep it on medium flame.
When oil gets hot, add ingredients mentioned under the tag, ‘Whole Garam Masala’.
Add finely sliced onions and fry them well till they get translucent.
Add finely chopped ginger-garlic and fry till raw flavor of garlic is gone.
Now throw in fresh kidney (rajma) beans.
Fry them for 1-2 minutes.
Put in rice and roast for 1 minute, add dry masala powders with salt.
Mix 2 cups of water and check for seasoning.
Adjust the seasoning well because after this stage we are going to close the lid.
Close the lid, make the flame high and cook till 1 whistle.
After first whistle, lower the flame and keep it on lowest flame for 7 minutes.
Switch off the flame and let the pressure release on its own.
Now open the lid and mix gently using a fork.
Serve hot with cucumber mint raita.
