Som Tam or spicy green papaya salad, is ubiquitous in Thailand. This dish combines the four main tastes of the local cuisine: sour lime, hot chili, salty, savory fish sauce, and sweetness added by palm sugar. The ingredients are mixed and pounded in a mortar. The Thai name som tam literally translates as “sour pounded”.
Som Tam can be changed in various ways, so feel free to add dried shrimp, leave out the peanuts, use more chilies, use less sugar – cool!!
Equipment and Utensils
Mortar and pestle
100 grams (1 cup) Green Papaya thinly shredded
10 grams (2-3) Long Beans cut into 1 cm long pieces
50 grams (1 Medium) Tomato cut into bite size wedges
1 Tablespoon Jaggery melted in 2 tablespoons of hot water
1 teaspoon Soya Sauce
¼ teaspoon Salt
2 Red Chilies
1 big Garlic Clove
Add garlic and chilies in mortar.
With the help of pestle pound garlic and chilies to coarse paste.
Add green beans and pound them lightly.
Add lime, soya sauce, jaggery water with tomatoes and pound them lightly.
Add shredded papaya and mix everything together.
Taste it and adjust the seasoning according to your taste.
