Lauki Ka Soup
I know that by reading the name of this recipe you must be wondering who makes such a weird soup! I too had a similar opinion until one day my Nutritionist at the gym told me this recipe and asked me to have it every day for a week. I too made (various) faces and told my mother to cook it for me but believe me, it tasted superb and was very filling. You too should prepare this soup and have it with salad for lunch and you will not feel hungry till evening.
I just modified her recipe a little. Instead of milk, I am adding water. No cream or any other thickening agent is used in this recipe. It is a perfect vegan and healthy soup recipe. This preparation is not at all spicy and it is very good for kids as well as any elders in the house.
If you are on a weight loss diet then this is a filling dish to have, since 100 gm of bottle gourd contains only 15 calories. Bottle Gourd is easy to digest and contains a lot of fiber. Thus this soup is very nutritious and even diabetic people can have it.
Equipment and Utensils
Pressure cooker with vessel
Saucepan with lid
Stainless steel ladle
250 grams (1 small) Bottle Gourd washed, peeled and cut into 1-inch squares
5 grams (5 small cloves) Garlic finely chopped
½ tablespoon Olive Oil
¾ teaspoon Salt
½ teaspoon Freshly Ground Black Pepper Corns
½ teaspoon Cumin Seeds
¼ teaspoon Turmeric Powder
500 ml Water
Put cut cubes of vegetable in a cooker vessel.
Keep this vessel inside the pressure cooker filled with a little water.
Close the lid and keep the pressure cooker on medium heat.
After 2 whistles switch off the flame and wait till all pressure is released.
Now take the cooked vegetable and blend it in a mixer to a smooth paste.
Put oil in a saucepan and keep it on medium flame.
When the oil is hot, add turmeric, cumin and garlic.
Sauté till raw flavor of garlic is gone.
Now add the bottle gourd paste and add water.
Season the soup with salt and pepper.
Mix everything properly and close the lid.
Let it boil for 2-3 minutes.
Switch off the stove and serve it hot.
