Broccoli and chicken is an awesome combination. Nowadays since broccoli is easily available in the market, I try to add it to every dish I make. 🙂 This is one such dish in which broccoli is used along with red and yellow bell peppers, and of course with chicken. This light recipe can also be used to make wraps that can be had for a quick dinner.
Equipment and Utensils
Non-stick frying pan
Flat wooden spoon

Ingredients
150 grams (1 small) Skinless Chicken Breast
75 grams (¾ cup) Broccoli Florets
100 grams(1 cup) Red and Yellow Bell Pepper Juliennes
½ teaspoon Salt
½ teaspoon Crushed Black Pepper Corn
Juice of 1 Lemon
1 teaspoon Finely Chopped Garlic
1 tablespoon Olive Oil
For Dressing:
2 Tablespoon Mayonnaise
½ teaspoon Crushed Black Pepper Corn
½ teaspoon Vinegar
Pinch of Salt
Directions
In a sauce pan of boiling salted water, add broccoli florets.
After 2 minutes, once the vegetable is tender, drain it well.
Now keep the pan on medium high heat.
Add ½ tablespoon of olive oil in it.
When oil gets hot add finely chopped garlic. Fry it till it gets a golden color.
Now add chicken breast. Sprinkle some salt and pepper over it.
Let it cook for 2 to 3 minutes on each side till it gets cooked.
Now remove it and cut it into 1 inch strips.
Again add remaining oil in a pan. Now sauté bell peppers and broccoli.
Sprinkle some salt and pepper on them.
After 2 minutes when veggies get tender, add chicken pieces.
Mix well and add it to the serving bowl.
Add all ingredients mentioned under the tag ‘For Dressing’ in a small bowl.
Mix well and while serving add dressing to the salad.
