Equipment and Utensils
Hand held electric cake blender
Rubber scraper spatula
Big mixing bowl
Stainless-steel or plastic sieve
Cake tin (5½ x 5½ x 1½ inches)
Digital kitchen scale
Ingredients
100 grams All Purpose Flour (Maida)
30 grams Cocoa Powder
130 grams Powdered Sugar
30 grams Almond roughly chopped
100 grams Vegetable Oil
2 Eggs at room temperature
1 teaspoon Baking Powder
½ teaspoon Vanilla Essence
Pinch of Salt
Directions
Preheat the oven at 180oC for 10 minutes.
Grease the baking tin.
Take oil, powdered sugar and eggs in a large bowl.
Start beating the mixture using an electric blender set at medium speed.
Stop the blender when all ingredients are properly mixed.
Now in same bowl, sift the flour, cocoa powder, salt and baking powder.
Add vanilla essence and almond pieces.
Now with the help of spatula mix the flour using the cut and fold method.
Don’t over mix.
Pour the batter into the prepared pan and spread it evenly.
Bake for 22 minutes at 180oc.
Take it out of oven when it puffs.
A skewer inserted in its center should come out clean.
Let it cool completely on a wire rack.
Cut and serve.
