This is a delicious dessert that is quick to make. It also looks colorful and inviting. This kheer can be made with either pumpkin or bottle gourd. However, I have used both pumpkin and bottle gourd to make this kheer nutritious and tasty. It is a great substitute for the usual Shevaiya Kheer.
A great idea for parties! Once prepared, it can be stored overnight in the refrigerator and then served chilled.

Pressure Cooker with Cooker Vessel
Ingredients
500 milliliters (2½ cups) Milk
125 grams Sugar
125 grams (¾ cup) Dudhi (Bottle Gourd) peeled and finely grated
50 grams (½ cup) Bhopla (Pumpkin) peeled and finely grated
10 grams (7-8) Almonds chopped
5 grams (4-5) Pistachios chopped
1 teaspoon Pure Ghee
½ teaspoon Cardamom Powder
Dash of Saffron
Directions
Put grated dudhi and bhopla in the cooking vessel of a pressure cooker.
Fill the pressure cooker with recommended amount of water and put this vessel into it.
Keep it on high flame and let it cook for 2 whistles.
Add pure ghee to a saucepan and keep it on medium-high heat.
Add boiled a mixture of dudhi and bhopla to it.
Stir for 1-2 minutes till a nice aroma is obtained.
Now add milk. Wait until it starts boiling.
Then, add sugar and saffron. Lower the flame.
Let it cook for 2-3 minutes till sugar gets completely dissolved.
Now add chopped nuts and cardamom powder.
Mix it properly and switch off the gas.
