It is pretty obvious that prawns fried rice should also have its place here since it is an Indo-Chinese recipe and it also contains my favorite prawns. So here it is, the recipe for prawns fried rice.
This recipe is very easy to make and doesn’t require any side dish to go with it. We usually have it with a little schezwan sauce or sweet chilli sauce. It needs some preparation time since you have to cut vegetables. The ginger and garlic need to be finely chopped too. Also some time is needed in cleaning and deveining prawns. Once everything is ready it gets cooked in less than 10 minutes.

Ingredients
110 grams (½ cup) Rice
50 grams (¼ cup) Carrot finely chopped
120 grams (2 small) Spring Onions finely chopped
150 grams (¾ cup) Prawns cleaned and deveined
2 teaspoons Garlic finely chopped
1 teaspoon Ginger finely chopped
1 Green chili finely chopped
1½ tablespoon Vegetable Oil
For Seasoning:
½ teaspoon Salt
¼ teaspoon Black Salt
½ teaspoon Black Pepper Powder
½ teaspoon Soya Sauce
½ teaspoon Vinegar
Pinch of Sugar
Pinch of Ajinomoto
Directions
Put 1½ tablespoons oil in a wok and keep it on high flame.
When oil is hot, add chopped ginger, garlic and green chili.
Fry ginger and garlic on high flame till they get slightly brown color.
Add vegetables and prawns and stir fry for 2 minutes.
Now add remaining ingredients like salt, pepper, sauce and vinegar.
Mix rice; sprinkle sugar and ajinomoto.
Now just fry the rice on high flame for 1-2 minutes.
Check for seasoning.
Add some green onion and take it off the flame.
Serve steaming hot.
