How to make a vegetable sandwich?
I know, I know….you must be thinking. Everyone knows how to make such an easy sandwich, there is no need to blog about it.
Still I felt that I should post this easy and quick recipe. Many of us must be having bread and butter for breakfast. We should add some veggies to it and make it healthy. You can grind green chutney on weekends and refrigerate it. It lasts for 7 to 10 days easily. Whenever you want to have quick and easy bites, just grab two slices of brown bread, apply this chutney and have it as plain simple chutney sandwich.
In Mumbai, you will find atleast one sandwich stall on every roadside and gully. I feel, if you are outside and feeling hungry then a veg sandwich is better than any other roadside snack. I like to have roadside sandwiches just because they remove all the hard edges of the bread slices. Silly me!
But be warned, if you eat this roadside sandwich snack every day for 2-3 months, you will easily gain 4-5 kgs of weight!!!
Make it at home and relish this for breakfast. It is a complete one dish meal. Use brown bread and homemade white butter too. Also add veggies like cucumber, tomatoes, boiled potatoes, capsicum, zucchini, carrot and beetroot.

Ingredients
8 slices of White Bread
2 tablespoon Butter
¼ cup Green Sandwich Chutney
125 grams (1 medium) Cucumber thinly sliced
100 grams (2 small) Tomatoes thinly sliced
100 grams (1 small) Potato boiled, peeled and thinly sliced
70 grams (1 small) Onion peeled and thinly sliced
50 grams (1 small) Capsicum thinly sliced
50 grams (1 small) Beetroot boiled, peeled and thinly sliced
½ teaspoon Chat Masala or Sandwich Masala
¼ teaspoon Salt
¼ teaspoon Black Pepper Powder
Directions
Cut the edges of all bread slices.
Apply butter on 4 bread slices and put them butter side up on chopping board.
Now arrange cucumber slices on buttered bread.
Sprinkle some salt on them.
Add potato and beetroot slices on the top of cucumber slices.
Now generously add some chat masala over potato & beetroot slices.
Arrange tomato slices and sprinkle black pepper powder over them.
Lastly finish the stack with onion and capsicum slices.
Lightly sprinkle some chat masala if needed.
Now apply chutney to other 4 slices of bread.
Cover the sandwich with chutney applied bread.
Cut into 4 pieces and serve them with tomato ketchup.
